Kevin Tickle has had a love affair with the Lake District landscape ever since he can remember… a love affair that over the years has blossomed into a fruitful and very deep-seated passion…

Tickle has an intimate knowledge of this beautiful landscape, which he has honed since childhood… but this is not a common a garden knowledge confined to the fell tops… his is a knowledge of fields, coast and woodland, for Kevin is a forager…

For some gathering wild food is recent trend, not so for Kevin, like our distant ancestors foraging is a way of life… when outdoors he is in his natural environment… for him wild ingredients sourced directly from our land and shores add more than a little something to the dishes he creates…

Working with the seasons and more importantly with the land Kevin is able to make use of a whole host of edible species; ingredients that are simply waiting for him to harvest and to then transform them… turning seemingly ordinary ingredients into a multitude of cordials, emulsions, garnishes and wrappings in the dishes he creates…
