Working closely with local farmers, growers, and foragers, Paul crafts menus that are refined and expressive, showcasing the character of each ingredient while bringing his distinctive style and technical skill to every dish.
Under Paul’s guidance, The Forest Side holds Five AA Rosettes and is proud to have been awarded both a Michelin Star and a Michelin Green Star – recognition not only of the quality and ambition of his cooking, but also of his unwavering commitment to sustainability and responsible sourcing.
